Similar to maple water, birch water (AKA birch sap) is a delicious, barely sweet beverage straight out of the trees that has been drank by people throughout the Northern hemisphere for centuries. It contains much less sugar than maple sap and boasts higher levels of electrolytes, polyphenols, antioxidants, and other beneficial plant compounds. There is no ‘birch syrup’ flavor present in pure birch sap, it just has a very subtle sweetness since the brix is usually between 0.5 and 1%.
We use the same technology for maple sap (ultrafiltration, reverse osmosis, vacuum evaporation) to be able to concentrate birch sap to a high brix level while having it look and taste much like fresh sap out of the tree when it is diluted back to the original sugar concentration. Concentrated birch sap is an ideal solution for beverage companies that want to be able to create new functional beverages with birch sap throughout the year. Just like with maple sap, beverages that use birch sap as the base ingredient contain no added sugar and take on whatever flavors are added to the final product.
