Until relatively recently, nobody knew that you could collect sap from beech trees. It was discovered by researchers at the University of Vermont who were experimenting with collecting sap from maple saplings and tried their technique out on other tree species. If you were to just hang a bucket on a beech tree (similar to a maple), no sap would be collected. However, when modern vacuum tubing systems are applied, we are able to extract a slightly sweet sap that becomes a delicious syrup with notes of raisins and figs. We are the only commercial producers of beech syrup in North America and this syrup is extremely limited, so we suggest placing pre-orders if you would like to secure your supply.
